Gooood morning! I’m harnessing my inner happiness project and trying to start the day positively. Really all I want to do is curl up with a warm blanket, drink coffee and watch Gilmore Girls all day. Is that too much to ask? Instead I’ll be off to work… oh well. Enter: Comfort Food

Here are some comfort foods that have been healthified for your liking. And I’m telling you now, these foods don’t taste like healthy foods. They taste yummy in my tummy.
And I can re-assure you, because my husband doesn’t like foods that taste like healthy foods. Like those people who make cookies with pinto beans or something. Pinto beans can be in my chili and that’s it. Sorry if you bake sweets with pinto beans.
I was inspired by Fitnessista for both of these recipes as they were on here weekly meal plan. I had no intention of making either of these but what happens is: it’s late at night and I start reading blogs and then I drool on my keyboard and then I get off the couch, take my laptop to the kitchen counter, and start making these recipes I read about. (<<That was terrible sentence structure but I don’t care.)

Like these Sweet Potato Brownies. I didn’t have Sweet Potatoes so I used canned Pumpkin. I grabbed 1/4 cup of Dark Chocolate Chips that I was hoarding in my freezer and melted them in the microwave along with the Coconut Oil.
Added 1.5 Cups of Pumpkin Puree. (The Brownies don’t taste like Pumpkin either)
Plus Almond Meal & Baking Powder. I didn’t use the Espresso Powder like she did.
++ All the other ingredients she has listed and whipped it all together. I greased this pie baking dish with Coconut Oil and baked them for 35 minutes at 325.
The crust was crispy…
And the middle was gooey…
The word gooey is weird, I just realized that. But these were fabulous. They aren’t going to turn out like normal brownies in the sense that they aren’t stiff as a board (aka chock full of flour) but they will taste delicious, I can promise you that. And they don’t taste like Pumpkin at all. Oh, and they are around 110 Calories so I’m totally fine with eating them. I also threw some in the freezer and ate them frozen later- a major win. I have a thing for frozen brownies, you can ask my friend Alex.
I came home from work around 8 last night and was starving. I mixed up this dish:
1 Cup of Kale, 1 Cup of Chopped Asparagus, 1/4 Cup of Black Beans, 1/4 Cup of Cooked Red Quinoa & 1/2 Cup of Salsa- Saute and Eat! So delicious and so simple.
And then drank a glass of this Love is In the Air Malbec. I love Malbec these days.
And then I decided to whip up a batch of bread. Have you ever bought a loaf of wheat bread like Sara Lee and let it sit in your pantry? I have and (1) month later, it still looked the same. Not an ounce of mold, scary stuff right there.
Also, have you ever spent $5 on a loaf of healthy bread? I have, and I decided to make my own loaf last night. The basis for this loaf was these ingredients:
This is adapted from Elena’s Pantry- Paleo Bread. I used the second recipe on her page because the first had some sna-fu’s. She uses just Almond Meal & Coconut Flour to make it Paleo. I decided to do 1.5 Cups of Almond Meal and 1/2 Cup + 1 Tbsp of Brown Rice Flour. For those of you who are truly Paleo, don’t use the Brown Rice. Sub in Coconut Flour or more Almond Meal.
You don’t really need a food processor to make it, it just helps it all stir together well. You could use a mixer or just get some use out of those big guns your packin’.
Plus these lovely mixins: 1 Tbsp of Each
I used a loaf pan and greased it with Coconut Oil to prevent sticking. I baked it at 350 for exactly 30 minutes and Ta-Da!
Fresh from the oven with 1 Tsp of Coconut Oil or butter- you are done for! I’m serious, I went to bed after this. If you want some the next morning, I suggest toasting it because it’s best served warm. But I don’t turn my nose up to cold bread, I’ll eat it no matter what! Especially when it’s fresh and doesn’t last for a month in my pantry without molding. I hope you enjoy!
