Good morning! This morning is our Foodie Pen Pal Reveal Day! You can see my last Foodie Pen Pal post here.
FINDS
Loy asked me what my kitchen colors were which are light greens and then sent me kitchen towels and a note pad to go with it! So cute.
The food items she sent were:
- Dark Chocolate Rolled Wafers- perfect with coffee
- Pesto- I love!
- Blackberry Preserves- perfect on toast
- Sweet Chili Sauce- this was tested in my Chicken Lettuce Wraps recipe coming later!
- (2) Apples- I always have an apple in my purse because they are my favorite snack!
This was a great foodie package, thank you Loy for all the treats!

FLAVOR
Dinner last night was Health Chicken Lettuce Wraps. I’m sure a lot of you have tried the famous lettuce wraps from P.F. Changs and if you were to search the calories and nutrition you would learn how caloric they are. I have several friends who have made “healthier” versions of the lettuce wraps, and this is mine. You can make this Vegetarian and not add the meat or add Tofu! I also used some of the Sweet Chili Sauce from my foodie package for this recipe and it tasted great.
Healthy Chicken Lettuce Wraps
Serves 4
Produce
- (3) Carrots
- (2) Celery Stalks
- (3) Cloves of Garlic
- (3) Scallions
- (1) Red Bell Pepper
- (1/4) Cup of Cilantro
- 1 head of Bibb Lettuce or Romaine Lettuce
Protein
- (1) lb of Ground Chicken
- (1/4) cup of Unsalted Raw Cashews
Seasonings & Sauces
- (1/4) cup of Plum Sauce
- (2) tbsp of Soy Sauce
- (2) tbsp of Rice Vinegar
- (1) tbsp of Sweet Chilli Sauce (not needed just extra flavor)
- (1/4) tsp of Salt
- (1/4) tsp of Black Pepper
Chop all produce ingredients + cashews into fine pieces (except the Bibb lettuce). If you have a mini chopper this will save you SO much time.
Add a few tbsp of olive oil to a non-stick pan and heat to medium heat. Add the Carrot, Celery, Bell Pepper, Garlic and Scallion to the pan and cook until it softens, about 5-7 minutes.
In a seperate pan, cook the Ground Chicken, breaking it up into tiny pieces as it cooks. Once the Ground Chicken is cooked throughout, add it to the vegetable mix. Stir in the Plum Sauce, Vinegar, Soy Sauce and Seasonings. Reduce the heat to low and let this simmer for 3 minutes until heated throughout.
Once it is all heated, remove from the stove and add the Cilantro & Cashews to the mix. Let this stand for 5 minutes to cool down for eating!
Fill the lettuce leaves with the chicken mixture and eat up! These babies won’t last long, they are so flavorful and delicious!
I hope you try them! They are really filling and full of nutrients! I used a very low amount of added sauces. We will be eating these for lunch today too

I love that you incorporated one of the goodies you received from your foodie penpal to make this delicious looking recipe! I love P.F Changs also..but so much sauce and sodium!! I’m seriously going to make this recipe sometime next week! I’ll let you know how it goes
